What is Chicken Parma?

Officially a Chicken Parmigiana, the parma is based on the Italian Parmigiana – a tomato and cheese extravaganza that drowns slices of aubergine in neopolitan sauce. The Aussie version is a pub favourite that is sure to line stomachs and cure hangovers.
